“Plain Jane” Muffins

This recipe was implemented during my second Principles of Food Preparation lab. It is very basic….hence the name “Plain Jane.”

Ingredients:

1 cup all purpose flour

2 tablespoons baking powder

1/2 teaspoon salt

3 tablespoon sugar

1/2 cup milk

2 tablespoon egg, blended

2 tablespoon vegetable oil

Instructions:

1. Preheat oven to 450 ° F

2. Lightly grease muffin tin bottoms (or use liners)

3. Sift together flour, baking powder, salt, and sugar

4. Blend together milk, egg, and oil. Do not beat until foamy but oil should be broken up into small globules

5. Make a depression or “well” in the dry ingredients with a tablespoon. Add the liquid ingredients

6. Stir 10-15 strokes or just enough until all dry ingredients are wetted; the batter should appear lumpy

7. Bake in oven for 15-20 minutes. The muffin should be golden brown at the end of the baking period

Tip of the Day

Easy way to reduce cholesterol! For less cholesterol, replace egg yolks with egg whites. Two egg whites = 1 whole egg.
