Nonstick cooking spray
2 cups all-purpose flour
1 cup packed brown sugar
3/4 cup granulated sugar
2 teaspoons ground cinnamon
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 cup slightly beaten egg whites (7 or 8 egg whites)
1/2 cup applesauce
1/2 cup cooking oil
3 cups finely shredded carrot
2 cups powdered sugar, sifted
8 ounces reduced-fat cream cheese
- Preheat the oven to 350. Coat a 15-by-10-inch baking pan with cooking spray. Set aside.
In a large mixing bowl, stir together flour, brown sugar, granulated sugar, cinnamon, baking powder and baking soda.
In a medium bowl, stir together egg whites, applesauce and oil. Stir into flour mixture. Stir in shredded carrot.
Spread batter in the prepared pan. Bake until a toothpick inserted near the center comes out clean, 25 to 30 minutes. Cool completely on a wire rack.
In a medium bowl, beat together sifted powdered sugar and cream cheese until smooth.
Spread frosting over the carrot cake; slice into 36 bars.
