Whole Grain Sweet Potato-Banana Muffins

(Serves: 9)

3/4 cp. all purpose flour

3/4 cp. whole wheat pastry flour

1/2 cp. brown sugar

2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. ground cinnamon

1/2 large sweet potato, cooked, mashed (about 1/2 cp.)

2 medium bananas, mashed (about 1/2 cp.)

1/2 cp. 1% milk

1/4 cp. vegetable oil

1 large egg, lightly beaten

Preheat oven to 400 degrees. Whisk  together first 6 ingredients (through cinnamon) in a large bowl, making a well in the center of mixture. Combine remaining ingredients until well blended. Add to dry ingredients, stirring just until moistened. Using ice cream scooper, portion batter evenly into lined muffin pans. Bake for 15 minutes. Remove from pan immediately and let cool on a wire rack.
